LOS ANGELES -- Usually, at a gas station, you just grab a soda and some snacks, but at this spot in L.A., you can get fresh-made Indian food better than you've ever had before.

"They've got chicken tikka, they've got paneer, they've got some vegetarian options. But the trick here is they make fresh naan, they put all the stuff inside, and they wrap it up into a burrito, so you can take it on the go," Chris Casey, Localish producer and all-around gas station food connoisseur says as he takes in the sights and smells of Bombay Frankie, L.A.'s only gas station that serves some of the best Indian cuisine around.

The Mumbai street food called a “frankie” is often described as an “Indian burrito,” which makes it sounds as if it’s a mash-up that involves filling a Mexican burrito with chicken tikka masala and the like. Which of course, on one level, it most certainly is.

But it wasn’t born here; it was born over there. It may have been tweaked a bit locally, but you won’t find guacamole as an option. This is an Indian dish that proves the universality of certain preparations, in the same way that, say, soup or a sandwich can be found, in one form or another, around the world.

The rise of the frankie in SoCal is a story of luck and pluck — the sort of tale of innovative restaurateurs that inspire one generation after another. The Bombay Frankie Company is the creation of the brother and sister team of Hiram and Priyanka Mac, who say their desire was to give Indian cooking the sort of “approachability” that may be lacking in more formal restaurants with intimidatingly large menus. They first opened in the family owned Chevron station on Santa Monica Boulevard — gas station cuisine that runs counter to the usual selection of salty bags of chips, and sweet bags of candies.

Inspired by their success — “I’ll have 10 gallons of premium and a chicken curry frankie on garlic naan!” — they opened a branch in the Westfield Mall in Culver City, and then as an option at a Koreatown ghost kitchen. And now, they’re in Woodland Hills, on a busy strip of Ventura Boulevard, next to a branch of Urban Plates, and just down the street from a Noah’s NY bagel shop, the very essence of culinary eclecticism.

There’s outdoor dining on the sidewalk. And as the world reopens, there’s seating inside — where you can watch the counter folks carefully fill and fold the frankies. And yes, bunky, they do look like burritos. But they sure don’t taste like them.

First of all, though the wrapper may look like a tortilla, it sure doesn’t taste like one, especially if you opt for the mildly intense garlic naan. (There’s roti bread as well, which is almost the same, but not quite.) Then, the fillings are anything but Mexican. There are no beans, no rice, no salsa, no guacamole. The defining choice is the chicken tikka masala — a wonderfully savory combination of richly marinated chunks of chicken, very lean, covered with an orange curry sauce.

The taste is, simply, addictive. The first bite is a revelation — where you might expect familiar chicken in familiar sauce, you get a three-ring circus of flavors. This is not a dish to be inhaled; it’s one to be enjoyed.

And the complexity continues, with scoops of the house hummus and peppery jeera potatoes — spend a moment with the potatoes, and you may detect cumin, red chili, ginger and coriander. There are cucumbers and tomatoes, red onions and mint chutney, a mint cream sauce, tamarind drizzle and cooing raita. This is a strikingly complex dish, possibly more so than those found on the streets of Mumbai. And though chicken tikka masala is the most basic of the fillings (well, really, chicken tikka without the masala sauce is even more basic; but the sauce makes the frankie sing!), the options are many.

There’s cubed paneer cheese, served both roasted tandoori style, and in a cream and tomato shahi sauce. There’s aloo gobhi — sweet potatoes and cauliflower. Chana masala — garbanzo beans in an orange masala sauce. Chicken curry, and crispy fish, and salmon in masala sauce. Those going obsessively low-carb can get the frankie “deconstructed” — the ingredients in a bowl, without the bread. Which overlaps with the numerous “Frankie Bowls” — jeera rice on bottom, topped as you wish with chicken tikka chicken tikka masala, shahi paneer, saag paneer, yellow daal or black daal, chana masala, masala salmon, chicken biryani and vegetable biryani.

There are crispy fish naan tacos, which I suspect really are a SoCal creation. And there are sundry snacks — samosas filled with beef or vegetables, hummus with naan bread, crunchy fish pakoras, and fantastic cauliflower fritters. There’s chaat as well, a dish that for me is pure pleasure — a bowl of crispy bread and spuds, chickpeas and chiles. A world of spices and yogurt as well. It’s a wonderful dish that exudes the joys of India.

Interestingly, the father of the Mac siblings has retired from his gas station business, and become the executive chef for the Bombay Frankie Company. The business began in his gas stations, and now he’s been subsumed into the joys of frankies. And there is much joy to be found here. Get yourself a frankie, and settle into a sweet mango lassi and the even sweeter desserts of gulab jamun and kheer.

One of the alternative beverages is a spicy cola from India called “Thums Up.” That’s no typo — there’s no “b” in this particular drink’s name. The Bombay Frankie Company may be in Woodland Hills. But with a little imagination, it could be in Mumbai. Especially as the summer heat comes upon, with no monsoon in sight.

This veg frankie roll is one of my favorite splurge snack recipes. Though normally I don’t make them as a snack, we actually eat them for dinner.

Really this is good served any time of the day. Snack, breakfast, lunch or dinner they are always sure to satisfy your Indian food cravings.

Actually, this is not a burrito, but because it is wrapped like a burrito is made. Hence you can call it Indian burrito or Bombay burrito.

There may be a few steps (different elements) to make this frankie at home. But I am telling you it is easy to make and end result is so worth it. In the end, I have provided a list of alternatives, substitution. It will cut down the cooking time in almost half yet tastes fantastic. So don’t forget to check that out.

Frankie vs Kathi roll

Both frankie recipe and kathi roll are popular all over India. They both look similar, ingredients used are almost the same but the taste is sure different. Also, the cooking method is slightly different, the addition of toppings have variations.

  • Frankies are from Mumbai (Bombay) while kathi roll is from Kolkata (Calcutta).
  • Stuffing for both made from boiled potatoes. In veg frankie, spiced mashed potato stuffing is shaped into a cylindrical log and again shallow fried into the oil. On another hand, kathi roll has boiled potato sabzi kind stuffing which has chunks of potatoes. Though different variations in stuffings are available in both like meat, paneer. In non-veg kathi rolls, a layer of egg is made on roti/chapati.
  • Chopped onions and pickles green chilies are added as a topping in frankie wrap while thinly sliced onion, cabbage, carrot, capsicum mixture is used a topping for kathi roll.

The preparation of making frankie recipe is divided into parts

NOTE: The recipe ingredients below in recipe card is for 4 no. of veg frankies. But in the step by step photos, I have tripled the amount, so you will see I am making 12 of them.

Preparation:

  • To make pickled green chili topping, combine sliced chilies and vinegar in a bowl. Keep it aside till needed.

  • Boil the potatoes in instant pot or stove-top pressure cooker. Once cool to touch, peel the skin and mash them using a potato masher.
  • Also, chop the onions and keep them ready. 
  • Make coriander chutney at home or buy it from the Indian grocery store or Amazon.
  • To make frankie masala at home, you will need - red chili powder, coriander powder, garam masala, roasted cumin powder, turmeric powder, black pepper powder, black salt and amchur powder

  • Mix these spice powders in a bowl.

How to make Frankie dough and roti?

1) Take all purpose flour, wheat flour and salt in a bowl. Mix well.

2) Add oil and mix with your fingertips. Then start adding little water at a time and keep kneading till you get a soft, smooth dough. Cover it and let it rest for 15 minutes.

3) After the resting time, knead the dough again to smooth out. Then divide into 4 equal portions. Make smooth balls and flatten it between your palm.

4) Work with one flattened disc at a time and roll into 9-10 inch diameter circle. While rolling if it is sticking then you can use the dry flour.

5) Once you have few roti rolled up and ready, heat the pan/skillet on medium heat. Once hot place rolled roti. Once you see a few bubbles on top then flip and cook another side. We are partially cooking the rotis. We’ll do the rest of the cooking at the time of assembling.

6) Remove it to a plate and cook rest of them similarly. Stack the cooked rotis and keep them covered.

How to make Frankie stuffing?

1) Heat the oil in a pan on medium heat. Once hot add crushed ginger-garlic-green chili paste. Saute for 30-40 seconds or till the raw smell of ginger garlic goes away.

2) Then add frankie masala and red chili powder. Lower the heat so spices do not burn.

3) Mix and cook for 10-20 seconds only.

4) Immediately add boiled mashed potatoes.

5) Mix well so spices are mixed properly.

6) Turn off the stove and mix in chopped cilantro.

7) Once it is cool to touch, divide it into 4 equal portions and shape into a cylindrical log

How to make frankie roll? (Assembling)

1) Heat the pan on medium heat. Add a generous amount of oil and fry the potato rolls from all the sides till they get golden brown in color. Remove it to a plate.

2) Now add a teaspoon of oil and place the partially cooked roti and cook the bottom side. Apply oil and topside, flip and cook another side.

3) Place the cooked roti on a work surface.

4) Spread the green chutney and sprinkle frankie masala.

5) The place potato roll on one side, sprinkle chopped onions on top.

6) Then add a few pickled green chilies.

7) Then start rolling it from the potato roll side, and halfway through close the one side (bottom side). In short, make a roll by keeping the one side open and another bottom side closed.

If you prefer, wrap it in parchment paper and serve.

Substitutions to make it in less time:

  • Instead of making homemade frankie roti, use the tortilla wrap or soft tacos (around 8-inch size). Do not use the large-sized one (12 inches).
  • Use the store-bought green coriander chutney.
  • Use the store-bough frankie masala. (It is easily available in Indian grocery stores. The brand name is Bombay magic frankie masala).

Variations:

  • Make it a little healthier and meal-friendly by adding veggies as a topping. You can add thinly sliced cabbage, carrot, bell pepper.
  • You can add stir-fried or oven-baked veggies (with few Indian spices) to make Indian burrito. e.g. cauliflower, bell peppers, zucchini, onions, mushrooms.
  • You can add some spiced chickpeas, beans.

Bombay Frankie {Indian Burrito}

This easy and delicious Bombay recipe is perfect portable Indian food. Packed with roasted veggies, fresh salad and cool chutney. 

As if we all don’t have a lot going on, we moved out of our house. That’s right, we agreed to sell our house before the lockdown started. However, it was all touch and go for a few weeks. Then all of a sudden, we found out on the Monday that it was all set to go through by the Friday! Absolutely nuts. Clearing out a house, while also having two kids at home was insane. Never do it. 

Somehow, we got it done. Now, I’m writing this while overlooking the farmland from our rental house. It all feels like a blur. Once we had all our stuff in storage (waiting for the shipping companies to start operating), we sat down in the rental house exhausted. I had no desire to make any food, so we turned to our favourite take away place for some great Indian food. Unlike most curry houses in the UK, this place doesn’t serve you a Tikka Masala and rice. No, they sell regional Indian food. My word is it tasty. Dry meat curry? Yup, I’ll have that. Want a full-on Thali, this is the place to go.

However, they also have one item on their menu I just had to try when I first found the restaurant; a Frankie. Now, a Bombay Frankie could also be known as an Indian burrito or Indian wrap. In any case, it uses a roti to wrap around a selection of delicious fillings. Perfect if you want a quick lunch or a new way of having a Indian curry.

So, how to make a burrito Indian style? Start with a roti, you can find them in most grocery stores. If not, check out this recipe. Next, you will want to decide on your main filling. In this recipe, I’m going vegetarian with a potato base and roasted chickpeas and cauliflower filling. Finally, you need some good sauces. I’m using my cilantro and mint chutney and kachumber to provide a great hit of flavour and additional fresh crunch to my version of a Bombay Frankie. 

Do yourself a favour the next time you are entertaining people with promises of an Indian or even burritos. Add Frankies to your table and dig in.

Ingredients

  • Roti wraps
  • Cauliflower head cut into florets
  • Chickpeas
  • White potatoes
  • Turmeric powder
  • Curry powder
  • Olive oil
  • Chaat Masala
  • Salt

Instructions

  • Peel, chop and boil the potatoes for 15 min. Enough time for the potato to easily be mashed with a fork. Drain but reserve about ½ a cup of water. Add in the curry powder, turmeric, the reserved water and a pinch of salt. Cover and set aside. 
  • Turn your oven to 350F. On a baking tray mix the cauliflower, chickpeas, Chaat masala and olive oil. Ensure everything is coated and bake in the oven for about 25min. Give it a stir after about 15min. 
  • Heat your roti and then assembly. Spread a thin layer of the potato mash on the base of the roti. Then add your roasted veggies and any other fillings you like.

How to make a meat Indian burrito

For a simple adaption, add some chicken or beef. Give either a chicken breast of beef a rub in curry powder and then grill and pan fry. For more fun, use a tandoori and yogurt marinade for very tender chicken. 

Topping ideas

Kachumber and Cilantro Mint chutney are good options. Other good options are spinach, grated carrot (in moderation), and red onions.

  • 1 Cauliflower head Cut into florets
  • 1 Cup Chickpeas
  • 2 tbsp Olive oil
  • 1 tbsp Chaat Masala
  • 1/2 Cup Cilantro Mint Chutney Optional
  • 1/2 Cup Kachumbar Optional

Instructions 

Curry Potatoes

  • Peel, chop and boil the potatoes for 15 min. Enough time for the potato to easily be mashed with a fork. Drain but reserve about ½ a cup of water. Add in the curry powder, turmeric, the reserved water and a pinch of salt. Cover and set aside. 

Frankie

  • Turn your oven to 350F. On a baking tray mix the cauliflower, chickpeas, Chaat masala and olive oil. Ensure everything is coated and bake in the oven for about 25min. Give it a stir after about 15min. 
  • Heat your roti and then assembly. Spread a thin layer of the potato mash on the base of the roti. Then add your roasted veggies and any other fillings you like.

Bombay Frankie Company Relocates from Chevron Station to Westfield Mall

CULVER CITY, Calif. — If you’re familiar with Indian cuisine, chances are you’ve had chicken tikka masala – the famed dish made with chunks of roasted, marinated chicken served in a tomato and cream curry sauce. At the Bombay Frankie Company, it’s just wrapped in flatbread and served like a burrito, or “frankie,” as it’s known in Mumbai.

“We wanted to bring Indian food here where it was more approachable,” said Priyanka Mac, the restaurant's co-owner with her brother Hiram Mac. “When you take a bite of a frankie, you get the texture, the flavor, the spice, the sweetness, the saltiness all in one bite.”

Opened Thursday at the Westfield Mall in Culver City, the large, airy space on the mall’s exterior serves traditional Indian with a fresh, California twist. Think naan baked on the spot in a traditional tandoor oven, along with saag paneer, potato samosas, and chana masala made with locally sourced ingredients, served with fresh chickpea spread, chutneys, and mango lassi, many of the dishes crafted from family recipes. 

For the past few years, the Bombay Frankie Company operated out of a Chevron station in West L.A. that was owned by the Macs’ father, an entrepreneur with a portfolio of Chevron, 76, and Shell stations. The siblings had been running various quick-serve restaurants out of the locations their dad owned and thought, “maybe this could work, this unorthodox pairing of being a gas station serving essentially really high-class Indian food,” said Hiram Mac. 

So the two partnered with an Indian chef who was already offering frankies as a sleeper item on his restaurant menu and went into business together as the Bombay Frankie Company. 

A popular Indian street food made from anything that can be stuffed inside a flatbread, frankies originated in North India, which is where the Macs’ parents were born before individually immigrating to London, getting married, and honeymooning in Los Angeles, where the sunshine and palm trees inspired them to relocate once again in 1980.

Hiram and Priyanka were both raised in Los Angeles, where their Indian heritage was kept alive in the kitchen. 

“Growing up, food was everything in our house,” Priyanka said. “Everything was always surrounded by food and the dinner table. One night we’re having dinner, and we’re already talking about dinner for the next night.”

Both parents were “really well culinarily versed,” Hiram added. “They would both make the same dish, but the taste was vastly different because of the familial spin they would put on it. Their mom or their dad or their ancestry had a particular way of making a certain dish.”

Their father has since retired from his gas station business. Now he works for his kids, as executive chef for the Bombay Frankie Company, creating signature dishes like salmon curry — a new item for the Westfield Mall location. 

Otherwise, the menu will be almost exactly the same as it was at the Santa Monica Blvd. Chevron station where the Bombay Frankie Company got its start. 

 

Their decision to move into a formal restaurant space was inspired by Westfield reaching out and offering them the location for “a great deal,” Hiram said. 

“The whole situation of being in a gas station with limited parking and people fearing, ‘Oh, I don’t know if I want to eat at a gas station,’ well, now we’re in a proper brick and mortar with tons of parking,” Priyanka added.

Tucked between Macy’s and Nordstrom Rack, the new restaurant is open from 11 a.m. to 10 p.m. for delivery, takeout, and dining on its outdoor patio.

Allow us to introduce you to The Bombay Frankie Company. If you haven't heard, they've been quietly serving up frankies (or wraps) and other dishes from the subcontinent from their storefront at a Chevron station in West Los Angeles.

But back to the frankies. The so-called "Indian burrito" comes with a choice of three fillings: chicken tikka, tandoori paneer, or aloo gobhi (which is vegan). And the wrap? Choice of naan, garlic naan (both baked daily in a clay oven), or roti. Add chickpeas, jeera (or cumin) potatoes, mint chutney, tamarind sauce, and some other toppings, and voila! Your pit stop is complete.

Bombay Frankie also serves frankies in a bowl (essentially just the filling), some a la carte Indian classics (samosas, chicken curry, even daal), as well as stuffed parathas and kulchas (which traditionally use baking soda or baking powder as leavening, while naan uses yeast). Kamaljit Singh, who previously helmed Nawad Cuisine of India and Bombay Cafe, is behind the kitchen. The shop has a few seats inside at the counter, otherwise, take that tandoori paneer frankie, a mango lassi, and get on with it.

Wrapped frankies are between $8 and $10 (50 cents more for a garlic naan or roti substitute), and the rest of the menu doesn't run above $13.
